PIE CRUST FOR THANKSGIVING (feed the masses)

When you're cooking for a crowd.  Wednesday, the night before Thanksgiving, is pie night around here.  Lots and lots of cutting, peeling, stirring, rolling, baking, tasting, and laughing.  And lots of people. Pie is the beautiful by-product.
