ADIRONDACK CAMP COOKIES aka BUFFALO CHIP COOKIES

 


WHEN YOU NEED TO MAKE A BIG OLD BATCH OF CHOCOLATE CHIP COOKIES!

We live in Utah, where we celebrate Pioneer Day, honoring the pioneers who founded our state. When I have kids to celebrate with, I make this recipe and spread the dough into circles about 8" in diameter. When they bake up they resemble the buffalo chips pioneer children used to gather for firewood. I hide them in baggies and the kids search for them.

The rest of the year this recipe will make about 100 4 inch cookies.

3 c sugar
2 c brown sugar
2 1/2 c shortening
1 c butter or margarine
8 eggs
3 T vanilla
8 1/2 c flour
4 t soda
2 t salt
24 oz semi sweet chocolate chips
walnuts optional

In a very large bowl, beat sugars, fats, eggs and vanilla till creamy.
Add flour, soda, and salt.
Gently stir in chocolate chips and optional nuts.
Using a size 30 ice cream scoop or rounded soup spoon, drop cookies 2 inches apart on ungreased cookie sheet.
Bake at 350 for 15-18 minutes
